Orange Cranberry Scones

Enjoy with coffee or tea at any time of day.

The dough can be made in advance, wrapped well in plastic wrap, foil, then placed in a Ziploc bag and frozen for up to 3 months. Make a double or triple batch of these and enjoy any time you have company, or you feel like having teatime with your kids or girlfriends.

Orange Cranberry Scones

Orange Cranberry Scones

The softest scones that will leave your mouth watering.

Ingredients

  • 2 cups + 2 tbsp (260 g) AP flour
  • 1 tbsp baking powder
  • 3 tbsp (40 g) sugar
  • ½ tsp salt
  • 5 tbsp (70 g) butter, cold
  • zest of one orange
  • 1 cup heavy cream
  • ¾ cup dried cranberries
  • 1 tbsp milk
  • ½ cup powdered sugar
  • 1 tbsp orange juice
  • 1 tbsp heavy cream

Instructions

  1. Mix together flour, baking powder, sugar, and salt.
  2. Cut in cold butter.
  3. Add orange zest and cream.
  4. Add cranberries and gently form the dough into a round shape. Make 2 disks if smaller scones are desired.
  5. Wrap dough disk(s) in plastic wrap, wax or parchment paper.
  6. Chill disk(s) in the fridge for 1-2 hours.
  7. Preheat oven to 400 F/ 205 C.
  8. Cut (each) disk into 6 equal pieces.
  9. Arrange on parchment paper lined cookie sheet with 2 inches between them.
  10. Brush with milk.
  11. Bake at 400 F for 16-18 min or until some browning starts to happen.
  12. Meanwhile mix powdered sugar with orange juice and cream to make the glaze.
  13. Drizzle glaze over baked scones. If “all over” uniform glaze is desired, add glaze on scones while hot. If you want to see drizzle lines, wait a few minutes for them to cool slightly.
  14. Enjoy!
