I did not grow up with sourdough bread at home. My parents baked bread every other day but it was yeasted bread. I was never impressed with the store bought sourdough bread since it was so sour.
One time, I went to a small eatery close by and had brunch but what I remember the most is the bread that came with it. It was a thick slice of bread and the crust was darker than I've seen before. The crunchiness was there and the crumb was perfect. It did not smell sour so I assumed it was yeasted. I asked the server just to make sure and she said, "Oh, it's our classic sourdough." I couldn't believe it so I ordered a side of bread, which came with butter and homemade jam. It was just as glorious as the first slice I had a few minutes prior. In that moment, a challenge started taking roots in my heart, "Can I make this bread at home? "
I had no knowledge of sourdough bread. I had no sourdough starter anymore since I tried before and failed (I forgot to feed the starter for a long time and killed it.)
Well, obstacles and excuses not to do anything will always show up but no one cares in the end. I am not one to give up easily so I got to work. I bought books, watched numerous videos, read articles, blogs and anything on the topic. I finally had a thriving starter that I thought about just like one of my kids. I wouldn't forget to feed a child, right? So I fed it regularly and it worked. Who knew that actually doing what needs to be done will give the expected results? I was so eager to achieve this goal I had set for myself that I would stay up late doing all this research while imagining the crunch of the loaf as I took it out of the oven and the sound it would make as it met the sharp blade of my bread knife.
